All American apple pie

pare, core and slice apples thin. Mix sugar, flour, and spices, and then mix thoroughly with apples. Heap apples into pie shell, dot with butter. Bake in a hot oven 425 degrees 40-45 min. or until apples are tender
Apple Butter
*2 dozen apples *2 quarts of sweet cider* 3 cups of sugar* 1/2 tsp. ground cloves* 1 1/2 teaspoons of ground cinnamon*
cook apples in cider until tender. Press through a sieve or food mill. Measure 3 quarts apple pulp; add sugar, spices. Cook slowly, stirring frequently until thick, about one hour. Pour hot apple butter into sterilized jars, leaving 1/4 inch headspace. Adjust caps. Process pints and quarts 10 min. in boiling water bath at simmering temp.(180degress-185 F,) When cool, test for seal. remove bands and store.
Mulled cider
* 1 quart apple cider* 1 teaspoon whole allspice*1 teaspoon whole cloves*2 sticks of cinnamon*
combine ingredients except lemon slices in a saucepan. Simmer for 20 min. Remove spices. Serve hot with floating lemon slices.
Apple Punch
*apple juice 1 quart* frozen orange juice concentrate 6oz. can* Ginger ale chilled 1qt.
Mix apple juice with frozen orange juice concentrate. Chill. Add chilled ginger ale immediately before serving.
Apple gift wrap
*roll of brown Kraft packaging paper* red raffia (sold at craft stores)* red poster paint* one big apple*
slice the apple down starting from the stem, dip in paint and stamp craft paper. Let the paper dry and add a stem and leaf with a green marker. Tie the gift with the red raffia ribbon, and it gives it a nice country look
Baked Apple Chips
*nonstick cooking spray*1 cup each water and sugar*2 large apples, not peeled*tongs*wire cooling rack at least 18 x 14 1/2 or 2 smaller racks
Heat over to 225 degrees Fahrenheit. Set wire cooling rack on foil (to catch drips). Lightly coat rack with nonstick cooking spray. Put water and sugar in a 2-qt saucepan. Bring to a boil, stirring until sugar dissolves. Boil vigorously 5 minutes until it is a light syrup consistency. Meanwhile, core and quarter apples. Cut each quarter in 10 to 12 thing wedges. Put in a large metal bowl and carefully add boiling hot syrup. Toss apples with tongs until well coated. Remove wedges separately and place close together (not overlapping) on prepared rack. Replace foil (you may need 2 pieces side by side), bring up sides and crimp to edge of rack. Back 2 1/2 hours. Loosen chips; let cool on rack. As they cool, they become crisp. Store in an airtight container.
*Note: It's important that the bowl be large enough so that only the part with the apples and syrup gets hot. When doubt, hold the bowl firmly with a thick potholder.
Apple Tarte Tatin
*1 ready-to-use refrigerated pie crust (from a 15-oz box), unfolded as package directs*4 tbsp (1/4 cup) butter, softened*1/2 cup plus 1 tbsp sugar*5 large (2 1/2 lb) Golden Delicious apples*1/2 tbsp ground cinnamon*1/4 tsp ground nutmeg
Line a nonstick 9 or 10 inch skillet with plastic wrap. If the handle of the skillet is plastic or wood, wrap it in a double layer of foil to protect it from scorching. Place pie crust in skillet and gently press to shape of skillet. Place in freezer al least 10 minutes or until crust is firm. Lift plastic wrap and crust from skillet. Place on a plate, cut a small X in center of crust and return to freezer. Place over rack in lowest position. Heat over to 400 degrees Fahrenheit. Spread butter over bottom and up sides of skillet. Sprinkle 1/2 cup sugar over bottom. Peel, halve and core apples. Set aside 1 half-apple, then cut the remaining halves in half and reserve 4 pieces. Arrange the remaining apples around edge of skillet, rounded sides down and slightly overlapping. Place half-apple in center and surround with reserved apple. Combine he remaining 1 tbsp sugar, the cinnamon and nutmeg. Sprinkle over apples. Cook over medium-high heat, swirling skillet gently. 10 to 15 minutes until sugar on bottom caramelizes to a rich golden brown. (Watch that it doesn't get too dark, or it will taste burnt). Remove from heat. Place cold crust upside down on top of apples (sides of crust will go between apples and sides of skillet). Back on low over rack 15 to 20 minutes until crust is browned. Carefully remove skillet from over. Run a plastic spatula around edges of tart to loosen. Place a flat plate over skillet. Holding skillet and plate together with potholders, carefully invert tart onto plate. Carefully lift off skillet. Scrape caramel from skillet onto tart and press any shifted apples in place. Serve warm or at room temperature.
Dried Apple Cake
*1 cup dried apples*1 cup dark syrup*1 egg*3/4 cup sour cream*1 cup sugar* 1 3/4 cups all-purpose flour*1 teaspoon baking soda*1 teaspoon cinnamon*1/2 teaspoon cloves*1/2 teaspoon salt
Soak dried apples overnight. In the morning, chop in small pieces and cook slowly in the syrup for 45 minutes. While apples cool, pour sour cream into the bowl. Add egg and beat thoroughly. Add sugar and continue to beat. Sift flour; measure and add salt, soda, and cloves. Sift again. Add sifted dry ingredients to the mixture. Beat thoroughly and then add apples. Blend together. Pour into a greased loaf pan 5 x 9 x 4 inches. Bake at 325 Degrees Fahrenheit for 1 hour.
Yields 1 Loaf
Quick Apple Tortes
*Graham crackers*apple butter*whipped cream or whipped topping
For each serving use four graham crackers. Spread three crackers with generous amount of apple butter and stack like layer cake. Frost the stack, both top and sides, with whipped cream or topping. Refrigerate overnight or for at least one hour. Sprinkle with ground cinnamon.
Apple Meat Loaf
*1 cup bread crumbs, soft *1 cup apples, peeled and chopped*2 pounds ground beef*1 egg*1/4 cup onion, chopped*2 tablespoons celery, finely chopped*3/4 teaspoon salt*1/8 teaspoon pepper*1/2 cup applesauce*1 tablespoon vinegar*1 tablespoon brown sugar*1 tablespoon prepared mustard
Mix bread crumbs, apple, beef, egg, onion, celery, salt and pepper. Pack into a
9 " x 5 " x 3 " loaf pan. Mix remaining ingredients. Spread over the meat mixture. Back at 350 Degrees Fahrenheit for 1 1/2 hours.
Serves 6-8
Apple Country Chicken Salad
*3 cups cooked chicken, (turkey, or ham if you prefer)*1/2 cup mayonnaise*1/4 cup orange juice*1/2 cup apple jelly, melted*1 tablespoon lemon juice*2 cups celery, finely sliced*3 apples, diced, unpeeled*1/2 cup walnuts, coarsely chopped
In a large bowl, mix mayonnaise, orange juice, apple jelly, and lemon juice. Add cut up chicken, celery, and apples. Toss to coat all pieces. Season with salt and chill until ready to serve. Sprinkle with chopped walnuts to garnish and add crunch.
Serves 6-8
Apple Spice Muffins
*3/4 cup milk*1 egg, beaten*1/4 cup melted fat*2 cups all-purpose flour*1/2 cup sugar*1 tablespoon baking powder*1/2 teaspoon salt*1 teaspoon cinnamon*1 cup apples, peeled and finely chopped*1/4 cup raisins
Add mil to egg; stir in fat. Mix dry ingredients thoroughly; stir in apples and raisins. Add liquid mixture and stir just until most of the dry ingredients are moistened. Do not overmix; batter should be lumpy. fill greased muffin tins two-thirds full. Back at 400 Degrees Fahrenheit for 20-25 minutes, or until golden brown.
Yields 12 muffins.
Apple Salad
*8 apples*2 bananas*1/2 cup chopped celery*1/2 cup raisins*1/4 cup coconut*1/2 cup peanuts*1/2 cup walnuts*juice of 1/2 lemon
Dice apples, do not pare them. Add lemon juice and mix thoroughly. this keeps fruit from turning dark. Drain and add chopped celery, banana, raisins, coconut, and nuts. Make one of the two following salad dressings and pour over the apple mixture.
You can make a cooked dressing of the following:
*1 cup water*1 teaspoon vinegar*1/4 teaspoon salt*1 cup sugar*1 tablespoon cornstarch*1/4 cup cream*1 teaspoon vanilla
An uncooked dressing may be made as follows:
*1/4 cup peanut butter*1/4 cup cream*1/2 cup sugar*1/2 cup mayonnaise
Yields 6-8 servings
Jellied Apple-Nut Salad
*1 package (3 oz.) lemon-flavored gelatin*1 cup boiling water*3/4 cup cold water*1 tablespoon lemon juice*1/8 teaspoon salt*1/2 cup finely chopped celery*1 1/2 cups chopped apples*1/4 cup chopped pecans
Dissolve the gelatin in the boiling water. Add cold water, lemon juice and salt. Chill until slightly thickened. Stir remaining ingredients into the gelatin. Chill until firm.
Variation:
Waldorf Salad
Omit gelatin, water, and lemon juice. Use 2 1/2 cups apples. Mix all ingredients, and blend in 1/4 cup salad dressing or mayonnaise.

Chicken-apple Salad
*2 cups chicken, cooked, diced*2 cups apples, unpared, diced*1/2 cup celery, chopped*1/4 cup raisins*1 tablespoon lemon juice*1/2 cup salad dressing, mayonnaise type*6 cups lettuce
Mix all ingredients except lettuce. Chill thoroughly. Serve in lettuce cups.
Variations:
Ham-apple salad- Omit chicken, use 2 cups cooked, diced ham.
Tuna-apple salad- Omit chicken, use two 6 1/2 or 7 oz. cans tuna, drained, and broken into large pieces.
Turkey-apple salad-Omit chicken, use 2 cups cooked, diced turkey.
Cheese-apple salad-Omit chicken, raisins, and lemon juice. Use 3 cups diced apples and 1 cup grated Cheddar cheese.
Applesauce Muffins
*1 3/4 cups flour, unsifted*1/4 cup sugar*4 teaspoons baking powder*1/2 teaspoon salt*3/4 teaspoon cinnamon*1/4 teaspoon ginger*1 egg, beaten*1/2 cup milk*1/3 cup shortening, melted*3/4 cup applesauce
Preheat over to 400 degrees Fahrenheit. Grease muffin tins. Mix flour, sugar, baking powder, salt, and spices thoroughly.
Mix remaining ingredients. Add applesauce mixture to dry ingredients, stirring until dry ingredients are barely moistened. Do not overmix, batter should be lumpy. Fill muffin tins two-thirds full. Bake 20-25 minutes or until lightly browned. Serve hot.
Apple Delight
*1 quart sliced apples*1 cup sugar*1 tablespoon all-purpose flour*1 teaspoon cinnamon*1/3 teaspoon salt
For Topping:
*3/4 cup oatmeal flakes*3/4 cup brown sugar*1/4 cup melted butter*1/4 teaspoon soda
Pare and slice apples. Combine sugar, salt, cinnamon and flour, and sprinkle over apples. Put apples in bottom of greased baking dish. Combine oatmeal, brown sugar, and soda. Add melted butter and run into oatmeal mixture to make crumbs. Place crumbs on top of apples, patting them down evenly. Bake at 375 degrees Fahrenheit for about 40 minutes. Serve with rich milk or whipped cream, as desired.
Apple Oatmeal Bars
*1 cup all-purpose flour, sifted*1/2 teaspoon salt*1/2 teaspoon soda*1/2 cup brown sugar*1 cup rolled oats*1/2 cup shortening*2 1/2 cups sliced apples*2 tablespoons butter*1/2 cup granulated sugar
Sift flour. Measure and add salt, soda, and brown sugar. Sift again. Add oatmeal flakes. Cut shortening into mixture until it is crumbly. Spread 1/2 of mixture in a greased baking pan 7 x 10 inches. Arrange sliced apples over crumb mixture. Dot with butter and sprinkle granulated sugar. Cover with remaining crumbs. Bake at 350 degrees for 40 minutes. Cut in squares or bars while still warm.
Yields 18-20 Squares
Old-Fashioned Apple Dumplings
*6 medium-sized baking apples*2 cups all-purpose flour*2 1/2 teaspoons baking powder*1/2 teaspoon salt*2/3 cup shortening*1/2 cup milk
Sauce:
*2 cups brown sugar*2 cups water*1/4 cup butter*1/4 teaspoon cinnamon or nutmeg
Pare and core apples. Leave whole. To make pastry, sift flour, baking powder, and salt together. Cut in shortening until particles are about the size of small peas. Sprinkle milk over mixture and press together lightly, working dough only enough to hold together. Roll dough as for pastry and cut into 6 squares and place an apple on each. Fill cavity in apple with sugar and cinnamon. Pat dough around apple to cover completely. Fasten edges securely on top of apple. Place dumplings 1 inch apart in a greased baking pan. Pour over them, the sauce made as follows:
Combine brown sugar, water and spices. Cook for 5 minutes, remove from heat and add butter. Bake at 375 degrees for 35-40 minutes. Baste occasionally during baking. Serve hot with rich milk or cream.

Georgia Apple Bread
*1 3/4 cups all-purpose flour*1/2 teaspoon baking soda*1 teaspoon baking powder*1 teaspoon salt*3/4 cup butter, melted*2/3 cup sugar*3 eggs*1/4 cup applesauce*1 cup Georgia Apples, peeled and chopped*1/2 cup sharp cheese, grated*1/4 cup chopped pecans*1 to 3 pats butter*1 teaspoon cinnamon sugar
Preheat oven to 375 degrees. Mix flour, soda, powder and salt. Stir in butter, sugar, eggs, applesauce, apples, cheese, and pecans. Mix thoroughly. Spoon into greased loaf pan. Bake 50-60 minutes, or until loaf tests done. Remove from over. Rub top with butter and sprinkle with cinnamon sugar. Return to over for five minutes.
Apple Crepes
*3 eggs*3/4 cup milk*1/2 cup apples, peeled and chopped*1/2 teaspoon salt*1/8 teaspoon nutmeg*1/8 teaspoon cinnamon*6 tablespoons all-purpose flour*3 tablespoons butter, melted
Blend all ingredients except butter until smooth, (about 30 seconds). Add butter and blend again. Let stand one hour.
Heat skillet or upside down crepe pan until water dropped on it beads up and sputters before evaporating. Grease if necessary. In regular skillet, pour and swirl a small amount of batter in the skillet. Brown, turn, and brown again. This will make about 15 skillet crepes, or 30 using the upside down pan.
Dessert Apple Crepe Filling
*1/2 cup powdered sugar*3 oz. cream cheese*1/4 cup butter*1/4 teaspoon vanilla*chopped apples*chopped pecans*apple butter
Mix powdered sugar, cream cheese, butter, and vanilla with electric mixer until fluffy. Spread on crepe. Add chopped apples, spoon of apple butter and pecans. Fold over crepe. Add whipped topping, a sprinkle of cinnamon and nuts for garnish, or any combination you desire.
Breakfast Apple Crepe Filling
*sausage links, cooked*apple butter
Fill crepe with a sausage link and a spoon of apple butter. Roll up or fold for an unusual breakfast treat.
Double Crust Apple Pie
*6-8 apples*dash salt*3/4 to 1 cup sugar*dash nutmeg*2 tablespoons all-purpose flour*pastry for 2 crust 9-inch pie*1/2 teaspoon cinnamon*2 tablespoons butter
Preheat over to 400 degrees. Peel, core and slice apples thinly. Combine the sugar, flour, spices, and salt. then mix with the apples. Line the 9-inch pie plate with pastry and fill with the apple mixture. Place thin slices of butter over the apples and then adjust the top crust. Don't forget to make a few slits in the top crust! Bake at 400 degrees for 50 minutes, or until done.
Yield: 9-inch Pie
Fried Apple Pies
*2 apples, peeled and chopped*1 cup raisins*1 lemon, add juice and grated peel*3/4 cup sugar*1 egg, beaten*pastry for two double crust pies
Combine apples, raisins, lemon juice, grated lemon rind, sugar and egg in saucepan. Brink to boil, lower heat and simmer 5 minutes. Cool.
Prepare pie crusts. roll out 1/4 at a time to 1/8" thickness. Cut 4-inch circles. Place one tablespoon apple mixture on each pastry circle. Fold in half. Moisten edges with milk or water and press together with the floured tines of a fork.
Fry in shallow oil (2 inches deep) heat to 375 degrees until golden brown. Drain on absorbent paper. Dust with powdered sugar. Can be made ahead, and reheated in the over.
Yield: About 3 Dozen
Creamy Apple-Cabbage slaw
*1/2 cup sour cream*1 tablespoon sugar*1/2 teaspoon salt*1/8 teaspoon pepper*1 tablespoon vinegar*1/2 teaspoon prepared mustard*1 1/2 teaspoons lemon juice*2 cups medium-sized apples, pared, thinly sliced*3 cups cabbage, shredded
For dressing mix sour cream, sugar, salt, pepper, vinegar, and mustard. Chill.
Sprinkle lemon juice over apples to prevent darkening. Lightly mix apples and cabbage together. Pour dressing over mixture just before serving. Toss lightly.
Yield: About 6 Servings
Carrot-Apple Salad
*1 cup carrot, shredded*3 cups medium-sized apples, unpared, diced*1/2 cup raisins*1/3 cup salad dressing, mayonnaise type*1 tablespoon lemon juice*1/4 teaspoon salt*salad greens (as desired)
Combine all ingredients except salad greens. Chill thoroughly. Serve on salad greens.
Yield: 6 Servings
Apple Cornbread
*1 lb. pork sausage*1 cup plain sifted cornmeal*1 cup plain sifted flour*1/4 cup sugar*4 teaspoons baking powder*1/2 teaspoon salt*1 cup finely chopped apples*1 egg, beaten*3/4 cup milk*1/4 cup butter
Fry sausage until brown and crumbly. Drain. Sift cornmeal, flour, sugar, baking powder and salt together. Stir in sausage and apples. Add egg, milk and butter. Mix until all dry ingredients are moistened. Spoon into cornstick or muffin pans. Bake in preheated oven at 400 degrees for 20-25 minutes.
Yield: 14 Cornsticks or 12 Muffins
Mincemeat-Apple Filled Peaches
*1 cup apple, unpared, finely chopped*1/2 cup mincemeat*1/2 cup miniature marshmallows*29-oz. can peach halves, drained*peach syrup, as needed
Preheat over to 375 degrees. Mix apple, mincemeat, and marshmallows. Place peach halves in a baking dish. Fill centers with apple mixture. Pour a few tablespoons of peach syrup into bottom of dish. Bake until peaches are thoroughly heated, about 20 minutes. To serve, arrange peaches on a platter around meat.
Yield: 8 Servings
Jellied Apple-Nut Salad
*1 cp boiling water*3/4 cup cold water*1 tablespoon lemon juice*1/8 teaspoon salt*1/2 cup celery, finely chopped*1 1/2 cups apples, unpared, chopped*1/4 cup pecans, chopped*salad greens (as desired)
Dissolve gelatin in boiling water. Add cold water, lemon juice, and salt. Chill until slightly thickened. Stir in remaining ingredients except salad greens; pour into a 1 quart mold or an 8 x 8 x 2 inch pan. Chill until firm. Serve on salad greens.
Yield: 6 Servings
Panned Apple Wedges
*3 tablespoons butter*1 tablespoon lemon juice*5 cups apples, peeled and cut into wedges*1/3 cup sugar
Melt butter in large skillet over medium heat. Mix apples and lemon juice; pour into fry pan. Sprinkle with sugar. Brown apple lightly on both sides, turning once. If apple are not tender, cover pan and cook over low heat a few minutes longer.
Serves 6
Spicy Apple Rings
*2 cups sugar*1 cup water*1 stick cinnamon*3 whole cloves*1 tablespoon lemon juice*red food coloring (optional)
Place all ingredients in 10 inch skillet and bring to boil. Core and peel two apples. Slice into rings. Place in syrup and cook until tender but firm (about 10 minutes). Serve as as edible garnish for meat.
The syrup can be thickened with 2 tablespoons cornstarch mixed with 1/4 cup cold water. Bring to boil and serve over apples as a sauce if desired.
Applesauce
*6 cups apples, chopped (with or without peel)*1 cup water*1/4 to 2/3 cup sugar, as desired
Cook apples in the water in a covered saucepan for 10 to 15 minutes, or until tender. Add additional water, if needed to prevent sticking. Mash undrained, cooked, peeled apples or put unpeeled ones through a food mill or sieve. Stir in sugar.
Yield: 6 Servings
Variations:
Honey Applesauce- sweetened with honey instead of sugar
Spicy Applesauce- cook 2 sticks of cinnamon with apples, remove cinnamon before mashing or sieving
Raisin Applesauce- add 1/2 cup raisins to hot applesauce
Apple Stuffing
*1/4 cup butter*1/2 cup onion*1/2 cup celery, chopped*4 cups apples, tart, unpared, diced*1/2 teaspoon salt*4 cups bread cubes, dry
Preheat over to 325 degrees. Melt butter in a large frying pan. Add onion, celery, and apples. Sprinkle with salt. Cook, turning occasionally, until apples are lightly browned, about 8-10 minutes. Add bread cubes; toss gently to mix ingredients. Bake in an 8 x 8 x 2 inch pan for about 1/2 an hour.
Waldorf Salad
*2 1/2 cups apples, unpared, diced*1/2 cup celery, finely chopped*1/4 up pecans, chopped*1/8 teaspoon salt*1/4 cup salad dressing, mayonnaise type*salad greens, as desired
Mix all ingredients except salad greens. Chill thoroughly. Serve on salad greens.
Spinach-Apple Salad
*4 cups spinach, bite-sized pieces*2 cups apples, tart, unpared, thinly sliced*4 slices bacon, cooked, crumbled*2 tablespoons salad dressing, mayonnaise type*1 tablespoon frozen orange juice concentrate, thawed
Mix spinach, apple slices, and bacon in a large bowl. Mix salad dressing with orange juice concentrate. Toss lightly with spinach-apple mixture. Serve immediately.
Applesauce Drop Cookies
*1/2 cup shortening*1 cup sugar*1 egg*1 cup flour, unsifted*1 1/2 teaspoons baking powder*1/2 teaspoon salt*1 teaspoon cinnamon*1/2 teaspoon cloves*1/2 teaspoon nutmeg*1 cup applesauce*1 cup raisins*1 1/2 cup rolled oats, quick cooking, uncooked
Preheat over to 375 degrees. Grease baking sheet. Beat shortening and sugar until creamy. Beat in egg. Mix flour, baking powder, salt and spices thoroughly; stir into fat mixture. Stir in applesauce, raisins, and rolled oats. Drop by level tablespoonfuls onto baking sheet. Bake about 15 minutes or until edges are slightly browned.
Yield: About 5 Dozen Cookies
Apple Cheese Quiche
*Two 9-inch pastry shells*2 cups grated Cheddar cheese*1 lb. mild sausage, cooked, drained, and crumbled*2 cups peeled, sliced apples*One 4 oz. can sliced mushrooms, drained*4 eggs*1 tablespoon all-purpose flour*1 teaspoon salt*1 cup evaporated milk* 1 1/2 tablespoons butter, melted
Bake pastry shells at 400 degrees for 8-10 minutes. Cool. Layer cheese, sausage, apples and mushrooms in pastry shells. Combine eggs, flour. salt, milk and butter; beat well. Pour half of egg and milk mixture into each shell. Bake at 375 degrees for 45 minutes, or until set. Let stand 5 minutes before serving.
Serves 8-10
Bottom Crust Apple Pie
Quick Pie Crust Pastry:
*1/2 cup butter*1 cup all-purpose flour*1 teaspoon sugar*1/2 teaspoon salt*1/8 cup iced water
*4 tart apples, peeled, cored, and sliced*1 tablespoon all-purpose flour*1/2 cup sugar*1 teaspoon cinnamon*pinch of ground nutmeg*1 tablespoon butter*Confectioner's sugar*whipped cream
Prepare pastry by combining butter and dry ingredients until mixture resembles coarse meal. Add iced water until dough pulls away from bowl. On a floured surface, knead dough once or twice; chill in freezer 15 minutes.
Roll out dough to a 12" circle. Line a 9" pie plate with waxed paper or aluminum foil; fit pastry into pie plate. Fill crust with apple slices. Sprinkle with flour, sugar and spices; dot with butter. Fold pastry edges up over apples, leaving center open. Bake at 375 degrees for 45 minutes, or until crust is golden brown. Cool slightly and slide pie out of pie plate onto a swerving plate or board, and remove foil or paper. Sprinkle with confectioner's sugar. Serve with a bowl of whipped cream.
Baked Apple Ice Cream
*8 baking apples* 3 1/2 cups sugar*2 cups boiling water*1 3/4 teaspoons ground cinnamon*red food coloring (optional)*2 enveloped unflavored gelatin*2 cups milk*1/2 teaspoon salt*4 eggs*4 cups light cream*One 4-serving size Instant Vanilla Pudding Mix*4 tablespoons lemon juice*1/2 teaspoon ground nutmeg
Halve and core 8 baking apples; place cut side down in a large baking pan. Dissolve 1 1/2 cups sugar in 2 cups boiling water; pour over apples. Sprinkle with 1 teaspoon ground cinnamon. Bake at 350 degrees for 45 minutes. Drain; cool.
Scoop pulp from skins. Puree pulp in blender or food processor. Add a few drops red food coloring, if desired. In a saucepan, soften gelatin in 1 1/2 cups puree. Heat until gelatin dissolves. Remove from heat; stir in remaining puree, milk, remaining sugar, and salt. In a large mixing bowl, beat eggs; add light cream, pudding mix, lemon juice, 3/4 teaspoon cinnamon, and nutmeg. Stir in puree mixture. Freeze in 4-5 quart ice cream freezer according to manufacturer's directions.
Apple Shrimp Salad
*2 cups diced, unpeeled red apples*3 yellow apples, sliced thin*1/2 lb. American cheese, cut in 1/2 inch cubes*1 1/2 pound shrimp, cooked and deveined*salad greens*cream dressing
Combine first five ingredients; toss until other ingredients are coated with French dressing. Drain off surplus dressing. Arrange on salad greens. Serve cream dressing separately.
Cream Dressing:
Combine 2/3 cup each mayonnaise and sour cream. Fold in 2 tablespoons cut chives.

Baked Ham Slices With Apples
*2 ham slices, 1/2 inch thick, cooked*2 cups thinly sliced tart apples*1 cup raisins*3 tablespoons brown sugar*1 cup fresh apple cider
Place one slice ham in shallow baking dish. Cover with apple slices, raisins and sprinkle with brown sugar. Top with remaining ham slice. Pour cider over all and bake at 350 degrees for 35 minutes. Lift to platter, pour juice over all and serve.
Yield: 4 Servings
Apple Spice Muffins
*3/4 cup milk*1 egg, beaten*1/2 cup melted fat*2 cups unsifted, all-purpose flour*1/2 cup sugar*1 tablespoon baking powder*1/2 teaspoon salt*1 teaspoon cinnamon*1 cup finely chopped apples*1/4 cup raisins
Add milk to egg; stir in fat. Mix dry ingredients thoroughly; stir in apples and raisins. Add liquid mixture and stir just until most of the dry ingredients are moistened. Do not overmix; batter should be lumpy. Fill greased muffin tins two-thirds full. Bake at 400 degrees for 20-25 minutes or until golden brown.
Yield: 12 Muffins
Tropical Apple Bread
*3 cups sifted all-purpose flour*1 cup sugar*1 tablespoon baking powder*1 1/2 teaspoons salt*1 cp flaked coconut, toasted*2 tablespoons of melted butter*1 1/2 cups milk*1 egg, beaten*1 teaspoon vanilla*1 1/2 cups packaged diced dates*1 1/2 cups finely chopped apples*1 1/2 cups chopped pecans
Mix and sift flour, sugar, baking powder and salt. Stir in coconut. Combine milk, egg, butter, and vanilla; stir in; blend well. Stir in dates, apples, and pecans. Spoon into two greased and floured loaf pans 9 x 5 x 3 inches. Bake at 350 degrees for 1 hour and 10 minutes. Cool on rack. Make two loaves. One for now, and one for the freezer.
